4 Easy Vegan Recipes

Lately, I’ve been turning to the same few meals over trying out new recipes. Honestly, the beginning of the semester has left me a bit drained of energy and creativity. I know I’ll get back on top of things, but for now, I need all the shortcuts I can get! Not only is this an easy post for me to put together, but it finally gives me a chance to talk about food. All of these recipes are quick and easy and of course, 100% vegan.

1. Carob & Peanut Butter Smoothie Bowl

It doesn’t matter how cold it is outside, this smoothie bowl always sounds good. When I first starting making it, I think I had it most days of the week for a solid two weeks! Whether it’s breakfast or dessert, it hits the spot.

Blend:

  • 2 frozen bananas
  • 2 dates
  • 1-2 tablespoons peanut butter
  • 1 heaping tablespoon carob
  • 1/2 cup cashew milk (add more as needed)

Top with your favorites fruits, nuts and seeds. I go for blueberries, cranberries, raisins, peanuts and chia seeds.

2. Peanut Butter ChocolateΒ Oatmeal

Peanut butter + almost anything = delicious (in my book, anyway)

My breakfast of choice has been oatmeal since… forever! It’s quick and filling, both of which are necessities for busy mornings.

Combine:

  • 3/4 cup of oats
  • 1 cup cashew milk
  • 1 heaping tablespoon cocoa powder
  • 1 tablespoon peanut butter
  • dash of cinnamon
  • dash of maple syrup

Top with chia seeds and strawberries. Yum!

 

3. Hearty Vegetable Stew

I love soups and stews in the winter. There’s something so cozy about settling in with bowl of stew and a film. It’s the best kind of lazy afternoon. As for this stew, I can’t take any credit. You can see the full recipe here. I will say I don’t add the kale or okra, so I can’t speak to how that tastes.

4. Chickpea Burgers

This recipe comes from the queen of vegan food, Cherie Tu. Her What I Eat in a Day videos are always a pleasure to watch. That’s where I found this easy burger recipe. It’s a great way to pretend it’s still summer. Watch it here (recipe in description).
