I love knowing what people really eat, so naturally if there’s a What I Eat in a Day video or blog post, I’m there. Today, the tables have turned and I’m sharing. It’s difficult to capture what a usual day of food is for me, so there will definitely be more of these in the future. I eat whatever I feel like (within reason) and on this particular day, I was craving cooked hearty food. Regardless of cravings, it’s all vegan and free of oil and refined sugar. Oh and lazy person friendly.
I’m still loving those oatmeal bites from my vegan snacks post. Lately, breakfast hasn’t been very appealing, but I can not only stomach, but also enjoy, these.
Preheat the oven to 350°F and mix:
- 2 mashed bananas
- 1 cup oats
- dash of cinnamon
- 2 spoonfuls carob powder
- 1-2 heaping spoonful cocoa powder
- 2 spoonfuls peanut butter or other nut butter
- 3/4 cup cashew milk
- walnuts or any other desired toppings
Spoon the mixture onto a cookie sheet and bake for 14 minutes. Bake longer for a firmer cookie.
I was HUNGRY, so I served up some easy vegan comfort food, mashed potatoes and green beans. After boiling and draining the potatoes, I added vegetable broth, cashew milk and pepper. I didn’t have any good herbs on hand. I’m still figuring out how to flavor potatoes without margarine, so suggestions are welcome. I added beans to a pan with soy sauce and garlic over medium heat. I despise when they’re mushy, so I only cook them for a few minutes under tender.
Honestly, not sure how I feel about this one. I looked at a few orange tempeh recipes and just went for it.
- 2/3 cup orange juice
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 2 cloves garlic
- 1/2 teaspoon cayenne
Pour over 8 oz. of cubed tempeh and marinate for at least a couple of hours.
While the rice is cooking (I made 1 1/2 cups), add tempeh and 16 oz. broccoli to pan over medium heat. Cook until broccoli is tender.
I decide to cozy up and watch the season finale of The Leftovers. Dinner was meh. Show was everything I wanted.
There you have it! I’m always hesitant to share food because I don’t make very exciting or beautiful dishes, but I know I’m not the only one. Also, I forgot to take photos, so please excuse the blurry screenshots from the video. Oops.
